Episode #042: Be Prepared and You Shall Not Fear Part 1: Preparing for 72 Hour Disasters

Join Deb, Heather and special guest Erika Collins from Emergency Essentials as we take a fun and motivated spin on food insurance–or food storage. Learn how a 72 hour kit can be easy to put together, inexpensive, and how vital it can be to your survival.

Challenge: Take inventory of the the food you have on hand. Figure out how long you could eat, not gourmet but well enough to keep healthy. Try on putting your babies to bed hungry for a week to keep you motivated during this challenge.

Recipe:

Chocolate Mousse

2/3 c. cocoa  3 t cornstarch, 1 can evaporated milk, 1 1/3 c. milk, 3/4 c sugar, 1/4 tsp salt, 3-6 T Ultra Gel, 1 t. vanilla

Combine cocoa and cornstarch in a separate bowl. Whisk the evaporated milk into the cocoa mixture until completely smooth. In a large saucepan, combine milk, sugar, and salt. Mix well. Bring to a boil over medium-high heat, whisking constantly. Remove pan from heat. Whisk cocoa mixture into hot milk mixture. Bring to a boil over medium heat; boil for 2 minutes whisking constantly. Remove pan from heat. Gradually whisk 3 T of the Ultra Gel into 1 c. of hot cocoa mixture. Pour mixture back into pan. Cook over low heat for 2 minutes, whisking constantly. If it needs more thickening, add the remaining Ultra Gel. Do not boil. Remove pan from heat. Add vanilla; blend well. Pour mousse into serving dishes. Vegan Chocolate Shake

2 banans
1-2 T cocoa powder
2 C soy milk
½ tsp vanilla
1T raw honey
3-4 cups crushed ice

Blend together until thick and enjoy!

Write this desire on the top of a page, and underneath write all the ‘reasons’ and excuses you have given yourself about why you haven’t achieved this dream. Ponder on this and tune in to Part 2 and prepare for serious breakthroughs.

Do you ever find yourself working harder and harder and getting less and less accomplished?  Feeling rushed with no time to breathe?  Maybe what you really need is to stop and sharpen your saw.  Sharpening your saw is different than merely taking a break or even going on a vacation.  That’s just putting the saw down.  When you put down a dull blade for a while, the blade will still be dull when you pick it up again.  Sharpening your saw is an active step to hone your skills, fill your reservoir, and recharge and refresh yourself.  Join Heather and Deb and their guest, Barbara Dunbar, Baby Boomer Coach and Realtor, as they discuss how Barbara sharpened her saw and the difference that has made in her daily life and for her future.

Challenge:  What does Sharpening Your Saw look like in your life? Here are some ideas: take a class, join a club, meditate, exercise, write, organize your home or office, go on a date with your sweetheart, improve your food plan, or have a deep and meaningful conversation.  Sharpening your Saw is not a once in a lifetime event – or even an annual event.  It can be daily or at least weekly – a time to stir your soul and give strength to your spirit.  Do it and do it often!

Recipe:
Nonfat Chocolate Sauce
Serve this chocolate sauce over fresh fruit, a frozen dessert, or a slice of bread. It will satisfy your most intense chocolate craving.
Yield: 8 servings
1/2 cup skim milk

1 tablespoon strong brewed coffee (optional)

1/2 teaspoon cornstarch

1/4 cup unsweetened cocoa powder

1/4 cup brown sugar

In a small saucepan, combine the milk, coffee, and cornstarch and stir until the cornstarch dissolves. Stir in the cocoa and brown sugar and bring to a simmer over medium heat. Cook for about 5 minutes, stirring, until the sauce thickens and is no longer cloudy. Set aside to cool. Use when cool or cover and refrigerate for up to 2 days.
Per Serving: 31 calories

Recipe:
Frozen Chocolate Cheesecake Bites! (www.hungry-girl.com)
(2 Bites: 40 calories, 0g fat, 100mg sodium, 6.5g carbs, 0g fiber, 1g sugars, 2g protein = 1 Point!)??Ingredients:
3/4 cup Cool Whip Free
5 tbsp. fat-free cream cheese; softened
1 tbsp. SPLENDA, Granular
10 tsp. HERSHEY’S Sugar Free Syrup
Directions:
Using a fork, vigorously mix Cool Whip, cream cheese and Splenda until smooth and well blended.  Evenly distribute mixture into 10 sections of an ice cube tray.  Tap tray firmly on the counter a few times to get mixture to settle flat.  Next, top each with a teaspoon of chocolate syrup.  Tap tray again to settle.  Place tray in freezer until Bites are solid – at least 2 hours.  Once frozen, Cheesecake Bites should pop out easily (if not, run the bottom of the tray under the faucet for a few seconds to loosen them).  Makes 10 Bites!
